Cocktail of the Month: The Sun Also Sets

I will never forget the time a man came up to the bar with an order for a companion and said, "And she wants an alcohol splits." I love the game of telephone with cocktail names, but this take on an Aperol Spritz was one of my most favorites.
So here's my take on an "alcohol splits," one of my most favorite summer cocktails. Refreshing and citrusy, and a delight to the eyes and nose as well as the palate.
Ingredients:
1 oz Aperol
.5 oz Cointreau
2 oz grapefuit juice
half an orange, squeezed fresh
4 oz Prosecco
Grapefruit soda or sparkling water to fill
ice
orange slice or peel for garnish
This is a simple one: just build the ingredients in the glass, starting without your alcohol and ice, then adding your juices and sparkling wine, and topping with soda.
